I wanted to bake mochi cookie for a period of time but always keep my plan delayed due to packing all ingredients. But I had found out a bake kit from Instagram (YESCHEF.HK) which already well packed all ingredients and including the step of making cookies.
Step 1: Stir the butter into liquid type
2. Mixed brown sugar and granulated sugar
3. Keep stirring till the sugar dissolved
4. Add one egg
5. Keep stirring
Tips: In order to make fluffy cookie, you must keep stir until the egg dissolved evenly (recommend to stir up to 10 mins)
6. Add cocoa powder, all purpose of flour and soda powder
Tips: Soda powder is for raise the cookie into nice shape
If you prefer crispy and flat cookie can skip this (soda powder)
Mochi part
1. Heat up 250ml of hokkaido milk (you can use any type of milk)
Either skimmed milk, high calcium or low fat...
Tips: Keep the fire to minimum (makes sure no bubble)
2. Stir with corn starch and sugar together before the heat (nicer mochi texture)
Tips: Mixed this before the heat to prevent my mistake (solidify the mochi which affect the texture)
My mistake :'(
Keep both cookie dough and mochi into refrigerator for 2 hours
Cut both into 15 pieces (depends what size of cookie you prefer)
Remember: Pre heat your oven FIRST
180 degree
I prefer mini size
Tada!!!!!!
I prefer to add on chocolate chips at the last procedure (you can add into the dough)
Ideal time: 180 degree for 12-14 minutes
If your cookie is big in size can bake for 15 mins
Cos I'm using mini oven so I only can stuff in 4 cookies at a time to makes sure all my cookies are baked evenly :)

Tips: Cool down your cookies first before put in air-tight container
(This will messed up your chocolate chips)
